Angel hair pasta with olive oil and vegetables





A few years ago, we had a dish served in our cafeteria - angel hair pasta with olive oil. I was in awe of that dish. As far as I remember it had simple wheat angel hair pasta with a lot of olive oil sprinkled with some black pepper. You may not believe me but that was one of the simplest and best cooked meal we ever had in our cafeteria. I am a sucker for simple recipes and easy proportions. I do not like to measure everything that I have to put in the dish, sometimes just your eyes can tell how much is good enough.

I tried creating that dish here today, above is the picture. I have modified the dish a bit with some inspiration from google search too :)

Here is the recipe of Angel hair pasta with olive oil and vegetables. I have tried using ingredients that I had ready at home.


Ingredients

  • Angel hair pasta
  • Extra virgin olive oil
  • Minsed/dry garlic
  • Frozen mix vegetables
  • Ground black pepper
  • Salt
  • Italian seasoning


Instructions:


  1. First boil the pasta based on the instructions on the cover. I tried boiling using the technique shown in here
  2. On the other side, put frozen vegetables in microwave to thaw. 
  3. Put oil in the skillet, put some garlic in there, added thawed vegetables
  4. Once vegetables were cooked well,  add Italian seasoning on the top of it. This way the seasoning retains its taste.
  5. I added the drained pasta to the skillet and put some more oil on it. More oil gives better taste.
  6. Finally add ground black pepper to the pasta and mix it well. 
  7. Put the pasta on the dish, ready to eat.
  8. You can put parmesan cheese on the top or on the side, based on your taste.
